Chard is lovely when fried, and this is another outlet for the wonderful scape pesto.

Ingredients
  • 2 tsp sugar
  • 1 tsp yeast
  • 1 cup warm water
  • 1.5 cups flour
  • tbsp salt
  • Dried herbs of choice
  • ½ cup milk
  • 4 tbsp olive oil
  • 1 cup chopped onions and onions greens
  • 2 cups chopped chard
  • 4tbsp Scape pesto
  • Grated cheese (amount and type is up to you!)
Instructions
  1. Mix the sugar, yeast and warm water, and let sit for ten minutes
  2. Add the flour, salt, milk, 2 tbsp of the olive oil, and dried herbs
  3. Knead it 'til it's stretchier and softer than bread dough
  4. Set oven to 375 F
  5. Roll it out on a floured surface, to fit a 12x24 baking pan
  6. Place the dough on the pan and let sit for 10 minutes
  7. While the dough is rising, fry the onions, chard and rest of the olive oil on medium high in a skillet. (preheat the olive oil before adding the rest)
  8. Bake the crust at 375 F until it starts to brown on the surface
  9. Pull out the crust, spread the scape pesto on it, add the fried onions and chard, and spread the grated cheese over top.
  10. Return the pizza to the oven until the cheese starts to bubble and is uniformly melted across the surface. Remove from oven and serve.

An easy and delicious way to use your scapes and herbs. Use it as pesto for just about anything, or finish with the pasta dish included!

Ingredients
  • 1 bunch of Scapes
  • ¼ cup Olive Oil
  • ½ bunch Kale OR Chard
  • ½ bunch Radishes
  • ¼ cup Pine nuts, Sunflower seeds, OR Pumpkin Seeds
  • 2 Green Onions
  • handful of basil or other herbs (cilantro, oregano, parsley, arugula, etc)
  • ¼ cup Mushrooms (optional)
  • ¼ cup Kalamata Olives (optional)
Instructions
  1. Chop the scapes and herbs, and add them to the blender with the olive oil, parmesan cheese, pine nuts, and a pinch of salt. Blend till smooth.
  2. Remove the stems from the Kale or Chard and slice thinly
  3. Slice the Radishes thinly
  4. Chop up the Chard or Kale leaves
  5. Saute onions, sliced Radishes, Mushrooms and Chard or Kale stems with a touch of olive oil until soft.
  6. Add chopped Chard or Kale leaves to boiling noodles just before they're done. Drain.

  • 3 med zukes
  • 2 med onions
  • 2 cloves garlic
  • 1 pepper
  • 2 kale leaves
  • 3 eggs
  • 2 tbsp yogurt
  • 1.5 cups flour
  • ½ tsp baking powder
  • salt, pepper
  • tsp dijon
  • herbs
Instructions
  1. Chop veggies, add yogurt, eggs, and sift in dry ingredients while mixing well. Heat oil in pan. Drop batter in and fry till both sides are golden. Delicious with a mayo/hot sauce mix.

Cold Cucumber Soup

Ingredients
  • 6 small-med. pickling cucumbers, washed, but not necessarily peeled, and cut into chunks
  • 1 cup sour cream (can use non-fat or low-fat)
  • 1 cup buttermilk (low-fat)
  • 1 tsp. dried dill weed
  • 1 Tbsp. lemon juice
Instructions
  1. Place all ingredients in blender and process.
  2. May need to do this in smaller batches and recombine. Serve cold.
